Gratin de Chou-Fleur
50 minutes · 6 servings · vegetarian
A very familiar French vegetable gratin, simplified for an everyday oven meal.
Ingredients
Check you have the quantities below.
- 1 large head cauliflower florets
- 2 tbsp butter
- 2 tbsp flour
- 2 cups / 480 ml milk
- 1 tsp salt
- 1/2 tsp black pepper
- pinch nutmeg
- 1 cup / 100 g Gruyère cheese, grated
- 1/2 cup breadcrumbs
Let’s make it
- Heat the oven to 400 F / 200 C. Boil or steam the cauliflower until just tender, about 6 to 8 minutes, then drain.
- Make a quick sauce by melting butter, whisking in flour, then whisking in milk, salt, pepper, and nutmeg until thick.
- Place cauliflower in a baking dish, pour over the sauce, and top with cheese and breadcrumbs.
- Bake 20 to 25 minutes until browned and bubbling.
Cut the cauliflower into small florets so kids can pick them up easily.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
