50 minutes · 4 servings · omnivore

These pan-fried dumplings are a very familiar Japanese home and restaurant dish.

Ingredients

Check you have the quantities below.

  • 1 lb / 450 g ground pork
  • 2 cups green cabbage, finely chopped
  • 3 tbsp scallions, minced
  • 2 cloves garlic, grated
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 30 round gyoza wrappers
  • 1 tbsp neutral oil
  • 1/2 cup water

Let’s make it

  1. Mix the pork, cabbage, scallions, garlic, ginger, soy sauce, salt, and pepper until well combined.
  2. Place 1 teaspoon filling in each wrapper and seal the edges with water.
  3. Heat oil in a nonstick skillet over medium heat and arrange the dumplings in a single layer.
  4. Cook 2-3 minutes until the bottoms are golden, add the water, cover, and steam 6-7 minutes until the pork reaches 160 F / 71 C.
  5. Uncover and cook until the water evaporates and the bottoms crisp again.
  6. Serve hot.

Make the dumplings small and serve them with mild dipping sauce for easier kid portions.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
