Japanese Potato Salad

30 minutes · 4 servings · vegetarian

A very common Japanese side dish, adapted with easy pantry ingredients.

Ingredients

Check you have the quantities below.

  • 1 1/2 lb / 680 g potatoes, peeled and cubed
  • 1 medium carrot, diced
  • 1 medium cucumber, thinly sliced
  • 1 tsp salt
  • 2 hard-boiled eggs, chopped
  • 1/3 cup mayonnaise
  • 1 tbsp rice vinegar
  • 1/4 tsp black pepper

Let’s make it

  1. Boil the potatoes and carrot until tender, then drain and cool slightly.
  2. Salt the cucumber and let sit 5 minutes, then squeeze out excess water.
  3. Mash the potatoes lightly and mix with carrot, cucumber, eggs, mayonnaise, vinegar, and pepper.
  4. Chill 10 minutes if you have time, then serve.
  5. Taste and add a little more salt if needed.

Mash the potatoes a little more for a smoother texture that many kids prefer.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
