Jok Moo (Thai Rice Porridge with Pork)

35 minutes · 4 servings · omnivore

A common Thai breakfast porridge adapted for home cooking with simple pantry ingredients.

Ingredients

Check you have the quantities below.

  • 1 cup jasmine rice
  • 8 cups water
  • 250 g ground pork
  • 2 cloves garlic, minced
  • 8 slices ginger, thinly sliced
  • 2 tbsp light soy sauce
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 2 tbsp spring onions, sliced
  • 2 tbsp fried garlic
  • 4 egg, fully cooked
  • 1 tbsp sesame oil

Let’s make it

  1. Rinse the rice well, then simmer it with the water, ginger, garlic, salt, and pork in a pot over medium-low heat.
  2. Cook 25-30 minutes, stirring often and mashing the rice, until thick and creamy and the pork is fully cooked.
  3. Stir in soy sauce and white pepper; adjust with a little more water if needed.
  4. Ladle into bowls and top with a fully cooked egg, spring onions, fried garlic, and a few drops of sesame oil.

Serve the porridge plain first and let kids add spring onions or fried garlic themselves.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
