Khao Krieb Pak Moh (Thai Savory Rice Flour Parcels)

45 minutes · 6 servings · omnivore

A classic Thai snack of soft rice-flour wrappers filled with savory pork.

Ingredients

Check you have the quantities below.

  • 1 cup rice flour
  • 1/4 cup tapioca starch
  • 1 1/2 cups water
  • 1/2 tsp salt
  • 250 g ground pork
  • 2 cloves garlic, minced
  • 1/4 cup shallot, chopped
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/4 cup cilantro
  • 1 tbsp vegetable oil

Let’s make it

  1. Whisk rice flour, tapioca starch, water, and salt into a smooth batter and let it rest 10 minutes.
  2. Cook the pork with garlic, shallot, fish sauce, sugar, and oil until fully cooked and crumbly.
  3. Cook small rounds of batter in a lightly oiled skillet over medium heat until set but still soft.
  4. Fill each round with the pork mixture, fold gently, and top with cilantro.

Make the parcels small so children can hold them without spilling the filling.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
