One of Thailand’s best-known sweets, made here with a straightforward steaming method.
Ingredients
Check you have the quantities below.
- 1 1/2 cups glutinous rice
- 1 cup coconut milk
- 1/3 cup sugar
- 1/4 tsp salt
- 2 ripe mangoes, sliced
- 1 tbsp toasted sesame seeds
Let’s make it
- Rinse the rice until the water runs mostly clear, then soak it in water for 20 minutes and steam or simmer until tender, about 20-25 minutes.
- Warm the coconut milk with sugar and salt just until dissolved; do not boil hard.
- Fold most of the coconut milk into the hot rice and rest 10 minutes.
- Serve with sliced mango and the remaining coconut milk, topped with sesame seeds.
Use very ripe mango so the dessert tastes sweet without extra sugar.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
