Kitsune Udon (Udon with Sweet Soy Aburaage)

25 minutes · 2 servings · vegan

A very familiar Japanese noodle bowl; this version uses easy pantry-friendly broth.

Ingredients

Check you have the quantities below.

  • 14 oz / 400 g udon noodles
  • 4 cups dashi or vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp mirin-free rice vinegar
  • 1 tsp sugar
  • 2 pieces aburaage (fried tofu pouches), sliced
  • 2 tbsp scallions, sliced

Let’s make it

  1. Bring the broth, soy sauce, vinegar, and sugar to a simmer in a pot.
  2. Add the aburaage and simmer 5 minutes so it absorbs the broth.
  3. Cook the udon according to package directions, then drain well.
  4. Divide the noodles between 2 bowls, ladle over the hot broth and tofu, and top with scallions.
  5. Serve immediately.

If the broth tastes strong for kids, dilute it with a little extra hot water.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
