Korean Beef and Radish Soup (Muguk)

45 minutes · 4 servings · omnivore

A comforting Korean soup, kept straightforward with beef and daikon radish.

Ingredients

Check you have the quantities below.

  • 8 oz (225 g) beef brisket or stew beef, thinly sliced
  • 6 cups beef broth or water
  • 3 cups daikon radish, peeled and sliced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1 tsp sesame oil
  • 2 scallions, sliced

Let’s make it

  1. Bring broth or water to a boil in a pot. Add beef and skim any foam, then simmer 10 minutes.
  2. Add radish, garlic, soy sauce, and salt. Simmer 20-25 minutes until the radish is tender and the beef is cooked.
  3. Stir in sesame oil and scallions just before serving.
  4. Serve hot with rice.

Keep the broth clear and simple; kids often like the soft radish pieces.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
