Korean Chicken Skewers with Sesame Soy Glaze

30 minutes · 4 servings · omnivore

A weeknight take on Korean grilled chicken flavors, cooked indoors.

Ingredients

Check you have the quantities below.

  • 1 1/4 lb (570 g) boneless chicken thighs, cut into pieces
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 tbsp water
  • 1 tbsp neutral oil
  • 1 tsp sesame seeds
  • 4 cups cooked rice

Let’s make it

  1. Soak wooden skewers if needed. Thread chicken onto skewers.
  2. Mix soy sauce, honey, sesame oil, garlic, and water. Brush some over the chicken.
  3. Cook the skewers in a grill pan or skillet over medium heat, turning, until the chicken reaches 74 C/165 F, about 10-12 minutes.
  4. Brush with remaining glaze and sprinkle with sesame seeds. Serve with rice.

Cut the chicken into small chunks and remove it from skewers before serving to younger kids.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
