Korean Omelet Roll (Gyeran Mari)

15 minutes · 4 servings · vegetarian

A standard Korean rolled omelet, great for lunch boxes and breakfast.

Ingredients

Check you have the quantities below.

  • 5 eggs
  • 2 tbsp milk or water
  • 1/4 tsp salt
  • 2 tbsp carrot, finely diced
  • 1 scallion, finely chopped
  • 1 tbsp neutral oil

Let’s make it

  1. Whisk eggs with milk or water and salt. Stir in carrot and scallion.
  2. Heat a lightly oiled nonstick pan over low-medium heat. Pour in a thin layer of egg.
  3. When the bottom sets, roll it up and push it to one side. Add another layer of egg and roll again.
  4. Repeat until all egg is used. Slice into bite-size pieces.

Let the omelet cool slightly before slicing for neat pieces.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
