Ingredients

Check you have the quantities below.

  • 2 cups dried mung beans, soaked 4 hours and drained
  • 1/2 cup water
  • 1 tsp salt
  • 6 oz (170 g) ground pork
  • 2 cups mung bean sprouts
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp neutral oil
  • 2 tbsp soy sauce
  • 1 tsp vinegar

Let’s make it

  1. Blend soaked mung beans with water and salt into a coarse batter.
  2. Mix in pork, sprouts, onion, and garlic.
  3. Heat oil in a skillet over medium heat. Spoon in batter and flatten into pancakes.
  4. Cook 4-5 minutes per side until crisp and the pork is fully cooked to 71 C/160 F. Serve with soy-vinegar dipping sauce.

For children, make smaller pancakes and keep the dipping sauce light.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
