Korean Toast with Ham, Egg, and Cabbage

20 minutes · 2 servings · omnivore

A Korean street-toast style sandwich adapted for home kitchens.

Ingredients

Check you have the quantities below.

  • 4 bread slices
  • 2 egg
  • 1 cup shredded cabbage
  • 1/4 cup carrot, grated
  • 4 ham slices
  • 1 tbsp butter
  • 2 tbsp ketchup
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Let’s make it

  1. Mix cabbage, carrot, egg, salt, and pepper in a bowl.
  2. Melt butter in a skillet over medium heat. Pour in the egg mixture and cook as a flat omelet until set on both sides.
  3. Toast the bread and warm the ham in the skillet.
  4. Assemble with omelet, ham, and ketchup between the bread slices. Serve immediately.

Cut into rectangles so it feels like a familiar school-day sandwich.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
