Kue Lupis

75 minutes · 4 servings · vegetarian

A traditional sweet sticky-rice snack often sold with coconut and palm sugar syrup.

Ingredients

Check you have the quantities below.

  • 2 cups glutinous rice
  • enough to soak water
  • as needed banana leaves or parchment
  • 1/2 teaspoon salt
  • 1 cup palm sugar
  • 1/2 cup water for syrup
  • 1 cup grated coconut, steamed

Let’s make it

  1. Soak the rice for 30 minutes, then drain. Shape into triangles or logs and wrap tightly in banana leaves or parchment.
  2. Boil the wrapped rice in plenty of water for 35 to 40 minutes until sticky and cooked. Drain and cool slightly.
  3. Make syrup by simmering palm sugar with 1/2 cup water until dissolved and slightly thickened.
  4. Serve the lupis with steamed coconut and palm sugar syrup.

Cut into small pieces for children because the sticky rice is chewy.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
