Lamb Souvlaki Skewers

40 minutes · 4 servings · omnivore

This is a familiar Greek grill dish. The short marinade keeps the flavor bright without needing overnight time.

Ingredients

Check you have the quantities below.

  • 1 1/2 lb / 680 g lamb leg, cut into cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pita bread
  • 1 cup tzatziki

Let’s make it

  1. Mix lamb with olive oil, lemon juice, garlic, oregano, salt, and pepper. Let stand 15 minutes.
  2. Thread onto skewers and grill or broil, turning once, until the lamb reaches 145 F / 63 C and rests 3 minutes.
  3. Warm the pita breads.
  4. Serve the lamb in pita with tzatziki or alongside salad.
  5. Rest the meat before serving.

If needed, serve the lamb off the skewer in small pieces for easier eating.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
