Moules Marinières, Family Style

30 minutes · 4 servings · omnivore

A classic coastal French dish adapted to avoid alcohol while keeping the familiar broth base.

Ingredients

Check you have the quantities below.

  • 2 lb / 900 g mussels, scrubbed and debearded
  • 2 tbsp butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 cup / 240 ml dry white wine substitute: fish or vegetable broth
  • 2 tbsp parsley, chopped
  • 1/4 tsp black pepper
  • 1 baguette, for serving

Let’s make it

  1. Discard any mussels that are open and do not close when tapped.
  2. Melt the butter in a large pot over medium heat. Cook shallot and garlic for 1 minute.
  3. Add broth and pepper, then add the mussels. Cover and steam 5 to 7 minutes, shaking the pot once or twice, until they open.
  4. Stir in parsley and serve with baguette. Discard any mussels that stay closed.

Serve in bowls with lots of bread for dipping and remove shells for younger children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
