Msemen (Moroccan square griddle flatbread)
90 minutes · 6 servings · vegetarian
A classic Moroccan street and home bread, often served at breakfast with honey or amlou.
Ingredients
Check you have the quantities below.
- 3 cups all-purpose flour
- 1 cup fine semolina
- 1 1/2 tsp salt
- 1 1/4 cups, plus more as needed warm water
- 1/4 cup vegetable oil
- 1/4 cup melted butter
- 1/2 cup semolina for shaping
Let’s make it
- Mix flour, semolina, salt, and warm water into a soft dough; knead 8 minutes until smooth, then rest 20 minutes.
- Divide into 12 balls. Oil a work surface, stretch each ball thin, and brush with oil-butter mix.
- Fold into a square parcel, resting 10 minutes if needed so the dough relaxes.
- Cook on a dry skillet or griddle over medium heat 3–4 minutes per side until golden and cooked through.
- Serve warm with honey, jam, or cheese.
Let children help brush on the oil-butter and fold the dough into squares.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
