Nam Prik Ong with Vegetables

35 minutes · 4 servings · omnivore

A classic Thai dipping dish often eaten with raw or blanched vegetables.

Ingredients

Check you have the quantities below.

  • 300 g ground pork
  • 2 cups tomatoes, chopped
  • 1/2 cup shallot, chopped
  • 3 cloves garlic, minced
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp neutral oil
  • 2 cups cucumber sticks
  • 2 cups long beans or carrot sticks

Let’s make it

  1. Cook shallot and garlic in oil until soft, then stir in red curry paste for 30 seconds.
  2. Add pork and cook until no longer pink and fully cooked.
  3. Add tomatoes, fish sauce, and sugar; simmer 10-15 minutes until thick.
  4. Serve warm with cucumber and long beans for dipping.

This dip is mild enough for kids if you skip extra chilies and keep the vegetables crunchy.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
