45 minutes · 6 servings · vegetarian

A festive Malaysian turmeric rice made simpler with a sweet coconut topping.

Ingredients

Check you have the quantities below.

  • 3 cups glutinous rice or jasmine rice
  • 1 tsp turmeric powder
  • 1 1/2 cups coconut milk
  • 1 1/2 cups water
  • 1 tsp salt
  • 2 cups grated coconut
  • 2 tbsp sugar
  • 1 tbsp palm sugar or brown sugar
  • 1/4 tsp pinch of salt
  • 1 leaf or 1/2 tsp pandan leaf or vanilla

Let’s make it

  1. Cook rice with turmeric, coconut milk, water, and salt until tender; rest 10 minutes.
  2. In a dry pan, cook grated coconut, sugar, palm sugar, salt, and pandan or vanilla over medium-low heat, stirring until golden and dry.
  3. Fluff the rice and serve with the sweet toasted coconut on top.
  4. Serve warm or at room temperature.
  5. Keep portions small, as the coconut topping is rich.

Shape the rice into small mounds for easy hand-held serving.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
