55 minutes · 6 servings · vegetarian

A festive-style Malaysian spiced rice with a simple mixed vegetable curry.

Ingredients

Check you have the quantities below.

  • 3 cups basmati rice
  • 2 tbsp ghee or butter
  • 1 tbsp oil
  • 1 small cinnamon stick
  • 3 cloves
  • 3 cardamom pods
  • 1 medium onion, sliced
  • 1 cup coconut milk
  • 3 cups water
  • 1 1/2 tsp salt
  • 4 cups mixed vegetables, diced
  • 2 tbsp curry powder
  • 2 medium potato, cubed
  • 1 1/2 cups water

Let’s make it

  1. Rinse rice. Sauté cinnamon, cloves, cardamom, and onion in ghee and oil 2 minutes.
  2. Add rice, coconut milk, water, and salt. Cook until tender and rest 10 minutes.
  3. For the curry, simmer vegetables, potato, curry powder, and water 15–20 minutes until soft and saucy.
  4. Serve the rice with the curry spooned on top or on the side.
  5. Remove whole spices before serving if you prefer.

Cut the vegetables small so the curry is easy for children to scoop with rice.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
