Nigerian Breakfast Porridge (Ogi with Groundnut)

15 minutes · 2 servings · vegetarian

A simple variation on pap commonly served in Nigerian homes.

Ingredients

Check you have the quantities below.

  • 1 cup corn ogi (fermented maize pap powder)
  • 3 cups water
  • 2 tbsp groundnut paste or peanut butter
  • 1 to 2 tbsp sugar or honey
  • 1 pinch salt

Let’s make it

  1. Mix the ogi with 1 cup of the water until smooth.
  2. Bring the remaining water to a simmer, then whisk in the ogi mixture and cook for 5 to 7 minutes.
  3. Stir in groundnut paste, sugar, and a pinch of salt until smooth.
  4. Simmer 1 minute more and serve hot.
  5. Add extra water if you want a thinner porridge.

Whisk well so the peanut paste disappears into the porridge.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
