Nikujaga (Beef, Potato and Onion Stew)

50 minutes · 4 servings · omnivore

A home-style Japanese meat-and-potato stew, simplified for a weeknight.

Ingredients

Check you have the quantities below.

  • 1 lb / 450 g thinly sliced beef chuck or stew beef, bite-sized
  • 3 medium potatoes, peeled and chunked
  • 1 large onion, sliced
  • 2 medium carrots, chunked
  • 2 cups water
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 tbsp neutral oil

Let’s make it

  1. Heat the oil in a pot over medium-high and briefly brown the beef.
  2. Add the onion, potatoes, carrots, water, soy sauce, sugar, and salt.
  3. Bring to a boil, then lower to a simmer and cook 25-30 minutes until the vegetables are tender and the beef is cooked through.
  4. Stir occasionally and add a splash of water if the pot gets dry.
  5. Serve hot, ideally with rice.

Cut the vegetables into smaller pieces for easier kid eating.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
