Ingredients

Check you have the quantities below.

  • 3 cups Ofada or brown rice
  • 2 cups beef or assorted meat, cooked
  • 2 tbsp locust beans (iru)
  • 2 medium green bell pepper
  • 1 to 2 scotch bonnet pepper
  • 1 medium onion
  • 1/3 cup palm oil
  • 2 medium tomatoes
  • 2 tsp salt

Let’s make it

  1. Cook the rice in salted water until tender, then drain.
  2. Blend the green peppers, scotch bonnet, tomatoes, and half the onion.
  3. Heat palm oil, sauté the remaining onion and iru, then add the blended sauce.
  4. Simmer 15 to 20 minutes until the oil rises slightly, then add meat and salt.
  5. Serve the sauce over the rice.

Remove the pepper seeds and keep the sauce mild for children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
