30 minutes · 4 servings · omnivore

A very popular Thai stir-fried noodle dish with a sweet-salty soy profile.

Ingredients

Check you have the quantities below.

  • 400 g wide rice noodles
  • 400 g chicken thigh, sliced
  • 3 cloves garlic, minced
  • 2 eggs
  • 3 cups Chinese broccoli, chopped
  • 2 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 3 tbsp neutral oil
  • 1/4 tsp white pepper

Let’s make it

  1. Mix both soy sauces, oyster sauce, sugar, and white pepper in a bowl.
  2. Heat 1 tablespoon oil in a wok and cook the chicken until nearly done.
  3. Add garlic, eggs, and Chinese broccoli, then toss in the noodles and sauce.
  4. Cook over medium-high heat until the noodles are glossy and the chicken reaches 74 C/165 F.
  5. Serve hot.

Cut the noodles a little shorter before cooking so children can manage them more easily.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
