Pesce al cartoccio

25 minutes · 4 servings · omnivore

A simple Italian parchment-baked fish method used along the coast.

Ingredients

Check you have the quantities below.

  • 4 fillets (about 600 g) white fish fillets
  • 1 cup, halved cherry tomatoes
  • 1 small, thinly sliced zucchini
  • 2 tbsp olive oil
  • 2 cloves, sliced garlic
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1, sliced lemon
  • 2 tbsp, chopped parsley

Let’s make it

  1. Heat the oven to 200 C / 400 F. Cut four large parchment sheets or foil pieces.
  2. Place a fish fillet in the center of each sheet and top with tomatoes, zucchini, garlic, olive oil, salt, pepper, and lemon slices.
  3. Seal into packets and bake 12–15 minutes until the fish reaches 63 C / 145 F and flakes easily.
  4. Open carefully, sprinkle with parsley, and serve.

Use boneless fillets and serve with soft bread to soak up the juices.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
