Polenta con ragù di salsiccia
50 minutes · 4 servings · omnivore
A hearty northern-style comfort meal using polenta, common across many Italian regions.
Ingredients
Check you have the quantities below.
- 1 cup polenta
- 4 cups water
- 1 tsp salt
- 400 g, casings removed Italian sausage
- 1 tbsp olive oil
- 1 small, chopped onion
- 1 can (400 g) crushed tomatoes
- 1/4 tsp black pepper
- 1/4 cup, grated Parmesan cheese
Let’s make it
- Bring the water and salt to a boil. Whisk in the polenta slowly, then lower the heat and cook, stirring often, for 20–25 minutes until thick.
- Meanwhile, heat the oil in another pan and cook the onion for 3 minutes.
- Add the sausage and cook until no longer pink, reaching 71 C / 160 F, then stir in the tomatoes and pepper. Simmer 15 minutes.
- Serve the ragù over the polenta and top with Parmesan.
Spoon extra sauce over the polenta so each portion is easy to eat with a fork.
