Ingredients

Check you have the quantities below.

  • 1 1/2 lb / 680 g chicken thighs, boneless skinless
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot or onion, minced
  • 2 cloves garlic, minced
  • 3 tbsp Dijon mustard
  • 1 cup / 240 ml chicken broth
  • 1/2 cup / 120 ml cream
  • 1 tsp thyme

Let’s make it

  1. Season the chicken with salt and pepper. Brown it in oil and butter over medium-high heat for 3 to 4 minutes per side.
  2. Add the shallot and garlic; cook 1 minute. Stir in mustard, broth, and thyme.
  3. Cover and simmer 12 to 15 minutes until the chicken reaches 165 F / 74 C.
  4. Stir in cream and cook 2 more minutes. Serve with potatoes, rice, or bread.

Slice the chicken before serving so it is easier for children to eat.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
