Red Bean Pancakes

25 minutes · 4 servings · vegetarian

A sweet home-style snack using a very familiar Chinese filling.

Ingredients

Check you have the quantities below.

  • 1 cup ready-made sweet red bean paste
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 3/4 cup milk
  • 1 egg
  • 1 tbsp neutral oil for the pan

Let’s make it

  1. Whisk flour, baking powder, and sugar. Stir in milk and egg to make a thick batter.
  2. Heat a lightly oiled skillet over medium heat. Spoon batter into small rounds.
  3. When bubbles form, add a teaspoon of red bean paste to each pancake and cover with a little more batter.
  4. Flip and cook until both sides are golden and the pancakes are cooked through.
  5. Serve warm.

Make the pancakes silver-dollar size so kids can hold them easily.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
