A familiar festive Malaysian pairing made with simple supermarket ingredients.

Ingredients

Check you have the quantities below.

  • 250 g all-purpose flour
  • 2 eggs
  • 1 tsp turmeric powder
  • 1/2 tsp salt
  • 400 ml coconut milk
  • 100 ml water
  • 1 tbsp oil
  • 300 g cooked chicken pieces
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt

Let’s make it

  1. Whisk flour, eggs, turmeric, salt, coconut milk, water, and oil into a smooth batter. Rest 10 minutes.
  2. Cook the chicken curry by sautéing onion and garlic, then adding curry powder, chicken, coconut milk, water, and salt. Simmer 15 minutes.
  3. Pour batter in lacy lines onto a lightly oiled pan over medium heat and cook 1–2 minutes per side; do not brown too much.
  4. Fold the roti jala into neat bundles and serve with curry.
  5. Keep the curry mild for family meals.

Fold the lacy pancakes into small bundles for easy grabbing.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
