Sai Ua (Northern Thai Herb Sausage)

60 minutes · 6 servings · omnivore

A Northern Thai sausage known for its herbs and aromatic spice; this version uses oven baking instead of smoking.

Ingredients

Check you have the quantities below.

  • 900 g ground pork
  • 3 tbsp red curry paste
  • 2 tbsp lemongrass, finely minced
  • 4 kaffir lime leaves, finely sliced
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar or brown sugar
  • 1 tsp coriander powder
  • 1 tsp cumin
  • as needed sausage casings or firm tofu skins

Let’s make it

  1. Mix the pork with curry paste, lemongrass, lime leaves, garlic, fish sauce, sugar, coriander, and cumin until sticky.
  2. Stuff into casings or shape into tight logs if using a casing-free method.
  3. Bake at 200 C/400 F for 25-30 minutes, or grill and turn often, until the sausage reaches 71 C/160 F.
  4. Rest 5 minutes, slice, and serve.

If making for kids, use a mild curry paste and slice the sausage thinly.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
