Salade Lyonnaise

20 minutes · 4 servings · omnivore

A classic Lyon-style salad adapted with pantry-friendly acid instead of wine-based ingredients.

Ingredients

Check you have the quantities below.

  • 6 cups frisée or curly lettuce
  • 6 oz / 170 g bacon, diced
  • 4 large eggs
  • 2 cups bread cubes or croutons
  • 2 tbsp red wine vinegar substitute: white wine vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Let’s make it

  1. Cook the bacon until crisp and remove it from the pan. Toast the bread cubes in the bacon fat or in a little oil.
  2. Make the dressing with vinegar or lemon juice, mustard, olive oil, salt, and pepper.
  3. Poach or soft-fry the eggs until the whites are fully set.
  4. Toss lettuce with dressing, top with bacon, croutons, and eggs, and serve immediately.

For children, serve the salad without the egg yolk if they prefer fully firm eggs.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
