Shiro Wat

35 minutes · 6 servings · vegan

Shiro wat is a very common Ethiopian chickpea stew; this is a pantry-friendly home version.

Ingredients

Check you have the quantities below.

  • 2 cups shiro powder (ground chickpeas or peas),
  • 2 medium onions, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons vegetable oil
  • 1 to 2 tablespoons berbere spice
  • 1 tablespoon tomato paste
  • 4 cups water
  • 1 1/2 teaspoons salt

Let’s make it

  1. Cook the onions in oil over medium heat for 8 minutes until soft.
  2. Add garlic, berbere, and tomato paste. Cook 1 minute.
  3. Whisk in the shiro powder, then slowly add the water while stirring to avoid lumps.
  4. Simmer 15 to 20 minutes, stirring often, until thick and smooth. Add salt and serve.

Start with the smaller amount of berbere and add more at the table if desired.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
