40 minutes · 4 servings · omnivore

A steamed Bandung snack and light meal, often sold alongside batagor.

Ingredients

Check you have the quantities below.

  • 300 g ground fish
  • 1/2 cup tapioca starch
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 8 cabbage leaves
  • 4 pieces tofu, halved
  • 2 medium potatoes, sliced and steamed
  • 1 cup peanut sauce
  • 2 tablespoons sweet soy sauce

Let’s make it

  1. Mix fish, tapioca starch, egg, garlic, salt, and pepper into a thick paste.
  2. Fill cabbage leaves and tofu halves with the mixture. Shape any extra into small balls.
  3. Steam the siomay, tofu, and potato slices for 15 to 18 minutes until the fish is fully cooked.
  4. Serve with peanut sauce and sweet soy sauce.

Serve the dumplings with extra steamed potato for a mild, familiar side.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
