Soufflé Omelette with Cheese

18 minutes · 2 servings · vegetarian

A home-friendly omelette with a light, airy texture inspired by French technique.

Ingredients

Check you have the quantities below.

  • 4 large eggs
  • 2 tbsp milk
  • 1/4 tsp salt
  • pinch black pepper
  • 1 tbsp butter
  • 1/2 cup / 50 g grated Gruyère or cheddar

Let’s make it

  1. Separate the eggs. Beat the yolks with milk, salt, and pepper. Whip the whites to soft peaks.
  2. Fold the whites into the yolk mixture gently.
  3. Melt butter in a skillet over medium-low heat, add the eggs, and cook until almost set.
  4. Add cheese, fold the omelette, and cook 1 minute more. Serve immediately.

Keep the heat low so the omelette stays soft and easy to eat.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
