Soupe à l’Oignon Gratinée (French Onion Soup)

60 minutes · 6 servings · vegetarian

A traditional French bistro soup adapted with vegetable broth for a meatless version.

Ingredients

Check you have the quantities below.

  • 5 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 6 cups / 1.4 L vegetable broth
  • 1 bay leaf
  • 1 tsp thyme
  • 6 baguette slices
  • 1 1/2 cups / 150 g Gruyère cheese, grated

Let’s make it

  1. Cook onions with butter, oil, salt, and sugar over medium-low heat, stirring often, until deep golden brown, 30 to 35 minutes.
  2. Stir in garlic and flour for 1 minute, then add broth, bay leaf, and thyme. Simmer 20 minutes.
  3. Heat the broiler. Ladle soup into oven-safe bowls, top with baguette slices and Gruyère.
  4. Broil 2 to 4 minutes until the cheese is bubbling and browned. Remove the bay leaf before serving.

Serve the soup without broiling if you want a simpler, less messy bowl for kids.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
