Suya-Spiced Grilled Chicken

45 minutes · 4 servings · omnivore

A home-cooked version of the well-known suya flavor profile.

Ingredients

Check you have the quantities below.

  • 2 pounds chicken thighs, boneless
  • 2 tbsp suya spice
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 medium onion, sliced
  • 1 medium bell pepper, sliced

Let’s make it

  1. Rub the chicken with suya spice, oil, and salt.
  2. Grill or pan-cook over medium heat until the chicken reaches 74 C/165 F, about 18 to 22 minutes.
  3. Add the onion and bell pepper in the last 5 minutes so they soften slightly.
  4. Rest the chicken for 3 minutes, then slice.
  5. Serve with rice, fries, or salad.

Offer a little spice on the side so children can taste it gently.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
