Tamagokake Udon (Udon with Egg and Soy)

15 minutes · 2 servings · omnivore

A home-style noodle bowl inspired by tamago kake gohan flavors.

Ingredients

Check you have the quantities below.

  • 14 oz / 400 g udon noodles
  • 2 large eggs
  • 2 tsp soy sauce
  • 1 tbsp butter
  • 1 tbsp scallions, sliced
  • 1 tsp toasted sesame seeds

Let’s make it

  1. Cook the udon according to package directions and drain well.
  2. Return the hot noodles to the pot and toss with butter.
  3. Crack in the eggs and stir quickly off the heat until the egg thickens and coats the noodles; keep stirring until the egg is fully set from the heat of the noodles.
  4. Season with soy sauce and top with scallions and sesame seeds.
  5. Serve immediately.

For kids, scramble the eggs in the pan first so the texture is fully cooked and familiar.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
