Thai Toast with Kaya-Style Coconut Jam and Butter

15 minutes · 4 servings · vegetarian

Inspired by Thai café-style toast snacks; it uses a familiar sweet spread for a simple home version.

Ingredients

Check you have the quantities below.

  • 8 bread slices
  • 4 tbsp butter
  • 1/2 cup coconut jam or pandan kaya
  • 2 tbsp salted peanuts, crushed

Let’s make it

  1. Toast the bread until golden.
  2. Spread each slice with butter and a spoonful of coconut jam.
  3. Top with crushed peanuts if using, then cut in halves or fingers.

Cut the toast into fingers for easy dipping and less mess.
