Zaru Soba with Dipping Sauce
20 minutes · 2 servings · vegan
Cold soba is a classic summer lunch; the dipping sauce is kept simple.
Ingredients
Check you have the quantities below.
- 7 oz / 200 g soba noodles
- 4 cups water
- 3 tbsp soy sauce
- 1/2 cup vegetable broth or dashi
- 1 tsp sugar
- 2 tbsp green onion, sliced
- 1 tsp grated ginger
- 1 sheet nori, shredded
Let’s make it
- Cook the soba in boiling water according to package directions, then drain and rinse under cold water until cool.
- In a small pan, warm the broth with soy sauce and sugar until the sugar dissolves; cool slightly.
- Divide the noodles between 2 plates and top with nori.
- Serve the sauce in small bowls with green onion and ginger for dipping.
- Eat by dipping bite-sized portions of noodles into the sauce.
For kids, toss the noodles with a little sauce instead of offering a strong dip.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
