Chicken Souvlaki Bowls

35 minutes · 4 servings · omnivore

A simple Greek-style souvlaki bowl with the familiar lemon, oregano, and yogurt combination.

Ingredients

Check you have the quantities below.

  • 1 1/2 pounds boneless chicken breast or thighs, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups cooked rice or couscous
  • 1 cup cucumber, diced
  • 1 cup tomatoes, diced
  • 1 cup plain yogurt

Let’s make it

  1. Mix chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper. Rest 10 minutes while the oven heats or the pan warms.
  2. Cook the chicken in a skillet over medium-high heat for 8 to 10 minutes, or until the chicken reaches 74 C/165 F.
  3. Divide rice or couscous between bowls and top with chicken, cucumber, tomatoes, and yogurt.
  4. Serve warm.

Serve the chicken and vegetables in separate sections so kids can build their own bowls.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
