Mediterranean · PANTRYHOP RECIPE

Date and Almond Bites

15 minutes · 6 servings · vegan

Inspired by common date-and-nut sweets found across the Mediterranean and North Africa.

Ingredients

Check you have the quantities below.

  • 1 1/2 cups dates, pitted
  • 1 cup almonds
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon cinnamon
  • 1 pinch of salt

Let’s make it

  1. Put the dates, almonds, cocoa, cinnamon, and salt in a food processor.
  2. Pulse until the mixture clumps together. If needed, add 1 to 2 teaspoons water.
  3. Roll into 12 small balls.
  4. Chill 10 minutes before serving if you like them firmer.

Roll the bites in sesame seeds or chopped nuts if the children are old enough for those textures.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
