35 minutes · 4 servings · vegetarian
A familiar baked-or-pan-cooked take on falafel wraps, using canned chickpeas for convenience.
Ingredients
Check you have the quantities below.
- 2 cans (15 ounces each) canned chickpeas, drained and rinsed
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup parsley, chopped
- 1/4 cup flour
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons olive oil
- 4 pita breads
- 2 cups lettuce
- 1 tomato, sliced
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 to 4 tablespoons water
Let’s make it
- Mash chickpeas with onion, garlic, parsley, flour, cumin, coriander, salt, and baking powder until the mixture holds together.
- Shape into 8 small patties. Heat olive oil in a skillet over medium heat and cook patties 3 to 4 minutes per side until browned and hot through.
- Whisk tahini, lemon juice, and enough water to make a pourable sauce.
- Fill pita breads with lettuce, tomato, falafel, and sauce.
Make the patties small and round for easier handling and dipping.
