Moussaka

90 minutes · 6 servings · omnivore

A classic Greek layered casserole simplified for a standard home oven and pantry ingredients.

Ingredients

Check you have the quantities below.

  • 2 large aubergines, sliced
  • 4 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups canned crushed tomatoes
  • 1/2 teaspoon cinnamon
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • 1 egg yolk
  • 1/4 teaspoon nutmeg
  • 1/2 cup parmesan

Let’s make it

  1. Heat the oven to 200 C/400 F. Brush aubergine slices with olive oil and bake 20 minutes, turning once.
  2. Cook beef and onion in a skillet until the beef is browned. Add garlic, tomatoes, cinnamon, salt, and pepper; simmer 15 minutes.
  3. For the sauce, melt butter, stir in flour for 1 minute, then whisk in milk until thick. Remove from heat and whisk in egg yolk and nutmeg.
  4. Layer aubergine, meat sauce, and white sauce in a baking dish. Top with parmesan and bake 25 to 30 minutes. Rest 15 minutes before serving.

Let the moussaka rest before cutting so the layers hold together for neat portions.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
