Mujadara (Lentils and Rice with Caramelized Onions)

50 minutes · 6 servings · vegetarian

A well-known Levantine staple of lentils, rice, and deeply browned onions.

Ingredients

Check you have the quantities below.

  • 1 cup brown or green lentils, rinsed
  • 1 cup rice, rinsed
  • 4 cups water
  • 3 medium onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 1/4 teaspoons salt
  • 1 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • optional plain yogurt or salad, for serving

Let’s make it

  1. Cook lentils in 3 cups of water for 15 minutes. Stir in the rice, 1/2 teaspoon salt, and 1 cup more water, then simmer covered 15 to 18 minutes until the rice and lentils are tender.
  2. While that cooks, heat olive oil in a skillet over medium heat and cook onions with a pinch of salt for 20 minutes, stirring often, until deep golden.
  3. Stir cumin and pepper into the lentils and rice. Top with most of the onions.
  4. Serve with the remaining onions on top.

Some children like the onions on the side so they can add them themselves.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
