Check you have the quantities below.
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 cups canned crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 eggs
- 1/3 cup feta, crumbled
- 2 tablespoons parsley, chopped

Let’s make it
- Heat olive oil in a large skillet over medium heat. Cook onion and bell pepper for 5 minutes until softened, then add garlic for 30 seconds.
- Stir in tomatoes, tomato paste, cumin, paprika, salt, and pepper. Simmer 8 to 10 minutes until slightly thickened.
- Make 6 small wells in the sauce and crack in the eggs. Cover and cook 6 to 8 minutes, until whites are fully set and yolks are cooked to your liking.
- Top with feta and parsley. Serve with bread.
For kids, spoon the sauce over toasted bread and add a fully cooked egg on the side.
