10 minutes · 2 servings · vegetarian

Labneh with za'atar and vegetables is a classic Levantine-style breakfast or light meal.

Ingredients

Check you have the quantities below.

  • 1 cup labneh or thick plain yogurt
  • 1 tablespoon za'atar
  • 1 tablespoon olive oil
  • 2 pita breads
  • 1 cup cucumber, sliced
  • 1 cup tomatoes, sliced
  • 1/4 teaspoon salt

Let’s make it

  1. Stir the labneh with half the za'atar and a pinch of salt.
  2. Warm or split the pita breads.
  3. Spread the labneh on the pita, then top with cucumber and tomato.
  4. Drizzle with olive oil and sprinkle the remaining za'atar on top.

Set out the toppings and let kids make their own pita pockets.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
