A simple Levantine-style version using canned beans for a faster home-cooking method.

Ingredients

Check you have the quantities below.

  • 2 cans (15 oz/425 g each) canned fava beans, drained and rinsed
  • 1/2 cup water
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp parsley, chopped
  • 1 cup tomatoes, diced
  • 4 pita bread, warmed

Let’s make it

  1. In a saucepan, combine fava beans and water. Cook over medium heat for 10 minutes, stirring and mashing some beans.
  2. Stir in olive oil, garlic, cumin, lemon juice, salt, and pepper. Cook 2 more minutes until hot.
  3. Top with parsley and tomatoes and serve with warm pita.

Mash the beans more for younger kids and keep the pepper light.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
