A classic North African and Levantine egg-and-tomato skillet, kept simple for home kitchens.

Ingredients

Check you have the quantities below.

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 can (28 oz/800 g) canned crushed tomatoes
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 6 eggs
  • 1/2 cup feta, crumbled

Let’s make it

  1. Heat oil in a skillet over medium heat. Cook onion and pepper for 6 to 8 minutes until soft.
  2. Add garlic, cumin, and paprika; cook 1 minute. Stir in tomatoes, salt, and pepper and simmer for 10 minutes.
  3. Make 6 small wells in the sauce. Crack in the eggs, cover, and cook 5 to 7 minutes until the whites are fully set.
  4. Sprinkle with feta and serve hot.

Serve with bread for dipping and cook the eggs until fully firm for children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
