A baked, weeknight-friendly version of the classic Levantine kibbeh casserole.

Ingredients

Check you have the quantities below.

  • 1 1/2 cups fine bulgur
  • 1 1/2 cups boiling water
  • 1 1/2 lb (680 g) ground lamb or beef
  • 2 onions, finely chopped
  • 3 tbsp olive oil
  • 1 1/2 tsp salt
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/4 cup pine nuts

Let’s make it

  1. Soak bulgur in boiling water for 15 minutes, then drain well.
  2. Cook half the onions in 1 tbsp oil for 5 minutes. Add half the meat, 1/2 tsp salt, allspice, and cinnamon; cook until browned. Stir in pine nuts.
  3. Mix the bulgur with the remaining raw meat, remaining onion, 1 tsp salt, and pepper until firm.
  4. Press half into a greased baking dish, add the meat filling, top with remaining kibbeh mixture, score into squares, drizzle with oil, and bake at 400 F/200 C for 35 to 40 minutes until the meat reaches 160 F/71 C.

Serve with yogurt or cucumber on the side and cut into small squares.
