Lebanese Potato and Egg Breakfast Skillet

30 minutes · 4 servings · vegetarian

A home-style Levantine breakfast inspired by the common potato and egg skillet.

Ingredients

Check you have the quantities below.

  • 1 1/2 lb (680 g) potatoes, peeled and diced small
  • 3 tbsp olive oil
  • 1 small onion, diced
  • 1 tsp salt
  • 1 tsp ground cumin
  • 6 eggs
  • 2 tbsp parsley, chopped

Let’s make it

  1. Boil the potatoes in salted water for 8 minutes, then drain well.
  2. Heat oil in a skillet and cook onion for 3 minutes. Add potatoes, salt, and cumin and fry for 8 to 10 minutes until golden.
  3. Make 6 spaces in the skillet and crack in the eggs. Cover and cook 4 to 6 minutes until the whites are set.
  4. Finish with parsley and serve hot.

Keep the cumin mild and cut the potatoes into small bites for children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
