Middle Eastern · PANTRYHOP RECIPE
Maqluba with Chicken and Eggplant
90 minutes · 6 servings · omnivore
An adapted home version of the upside-down rice-and-chicken dish common in Palestine, Jordan, and surrounding areas.
Ingredients
Check you have the quantities below.
- 2 lb (900 g) bone-in chicken pieces
- 2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp olive oil
- 2 medium eggplant, sliced
- 1 large onion, sliced
- 2 cups rice, rinsed
- 3 1/2 cups water or chicken broth
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
Let’s make it
- Heat oven to 425 F/220 C. Roast eggplant slices brushed with 1 tbsp oil for 20 minutes until browned.
- In a pot, cook chicken in 2 tbsp oil with onion, salt, and pepper for 10 minutes, then add water or broth and simmer 20 minutes.
- Layer roasted eggplant, chicken, and rice in the pot. Sprinkle with allspice and cinnamon, then add enough cooking liquid to cover the rice by about 1/2 inch.
- Cover and cook on low for 25 minutes until rice is tender and chicken reaches 165 F/74 C. Rest 10 minutes, then invert onto a platter.
For kids, serve a portion from the top of the pot instead of turning it out.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
